Shrimp and Sausage Stir-Fry
In 20-Minutes or less you can stir-up something crazy for you and your family!
You ready?
Ingredients you will need:
All ingredients are purchased from Costco. Costco has great prices on meats, and I am obsessed with Coleman's Mild Italian Chicken Sausage with Shrimp.
Trainer Haley Shrimp and Sausage Stir-Fry: Serves 6
Ingredients:
1 lb Cooked Shrimp (thaw and remove tails)
1 package Mild Italian Chicken Sausage (cut into 1-inch slices)
1 tbsp. Minced Garlic
1 tbsp. Grapeseed Oil
1 medium Zucchini
2 cups Sugar Snap Peas
1 Orange or Red Bell Pepper
Handful Cherry Tomatoes
2-packages Minute Maid Wild Rice
Optional Seasonings: Cayenne Pepper, Italian Medley or Lemon Pepper, and Toasted Sesame Seeds
Directions:
Cook rice according to package.
Heat up skillet on medium-high heat with EVOO and minced garlic. Add sliced chicken sausage and cook for 7-8 minutes (until nice and brown).
Add cooked shrimp and stir-fry until shrimp warms up
Remove from pan and place into sealed dish.
Add Zucchini, snap peas, bell pepper to skillet and stir-fry until nice a crispy (5-6 minutes). Add cherry tomatoes and cook for another 2-3 minutes.
Once rice is finished combine rice with vegetables and mix all ingredients together.
Season with optional seasonings of choice.
