St. Patty's Day Recipes: Taking you through an Irish themed day!

Whether you’re Irish or not St. Patty’s Day is a day (or week) filled with TONS OF CELEBRATIONS!! This blog post is taking you through a day themed St. Patty’s day to WOW your family and friends with! Breakfast, snack, dinner, and even appetizer options available for YOU!

Green pancakes? ARE YOU KIDDING ME? This is what I thought to myself when I was thinking of recipes to make for the blog. Surprising REALLY GOOD! Grain free and FILLED with healthy protein and carbohydrates to help you start your day off right!

Ir-wish Pancakes: (Yields 1) *made by Haley Shaw* Ingredients: ½ banana 3 egg whites 1 scoop Vanilla Ice Cream Level-1 Protein Powder 1 tbsp. Milk (I used Lactaid Milk but skim, coconut or almond milk work great too) ½ cup Spinach Mixture

Directions: Heat up a skillet to medium heat. Combine everything in a blender and blend until smooth. Spray skillet with Pam cooking spray and cook until bubbles start to form. Flip over and repeat until all batter is gone.​

Amp Up Fitness Secret Frosting: *made by Haley Shaw* So easy and so good!​

Ingredients and directions: ½ scoop Vanilla Ice Cream Level-1 Protein Powder (CTC Phormula-1 works great too!) Start out with splash water and mix the two together until you get your desired consistency. Lastly, the secret ingredient…Walden Farms Zero Calorie Syrup. Add to desired consistency (a little goes a long way). Pour over pancakes, slice up other half of banana and DEVOUR!

Snack or Breakfast Idea:

Okay...if the green pancakes are a little too crazy for you, you can give my Leprechaun shake a try

Leprechaun Shake: (Yields 1) *made by Haley Shaw*

Ingredients:

Ice (I used about 6 ice cubes)

½ cup Frozen Bananas

Handful Spinach Mixture

1 scoop Strawberry Milkshake Level-1 Protein Powder

Blend all ingredients together and enjoyJ

Optional Toppings:

1 tbsp. Peanut/Almond Butter

Chia/Flax Seeds

Berries and coconut flakes

¼ cup Raw Nuts

Dinner:

Corn Beef and Cabbage Soup: (Yields 8)

Ingredients:

1 tbsp. EVOO

3 leeks, chopped

1 tbsp. Minced Garlic

4 medium carrots, chopped

2 yellow pepper, chopped

2 lb lean corned beef brisket

7-8 cups water

2 bay leaves

½ cup chopped parsley

1 medium head cabbage, cored and chopped

2 large potatoes, peeled and cubed

Fresh pepper to taste

Directions:

In large pot, heat oil over medium heat. Add leeks, garlic, carrots, and yellow pepper and sauté until soft (about 5 minutes)

Add corned beef, bay leaves, parsley, water, cabbage and potatoes; cover and bring to a boil. Simmer covered on low heat for 3 hours over stove or 6-8 hours in crock pot *low heat.

Once the corned beef becomes tender (after its been sitting for 3 hours *simmered on stove or 6-8 hours *low heat in crock pot) remove it and set on a cutting board and shred with a fork. Return it to the pot and mix all together.

Serve and enjoy an authentic healthy style Irish dinner!

Ingredients:

1 cup Blueberries

2 cups Strawberries (sliced)

2 cups Green Grapes

1 cup Diced Pineapple

4 Clementine’s

1 cup small Marshmallows

1-2 handfuls Chocolate Candy (any chocolate candy wrapped in gold foil will do)

Perform your magic by assorting the candy as if it were a rainbow, starting with strawberries, clementine’s, pineapple, green grapes blueberries and ending with red grapes.

Place marshmallows on one end of rainbow and gold candy on other (resembling rainbow in the sky with gold at the end for the lucky leprechaun!

There you have it! A fun-filled St. Patty's day meals. PS don't forget the green beer (or soda if you're under age)
